In this lockdown, you need to find any possible source of happiness to stop yourself from going stir-crazy. My flatmates and I love getting a takeaway to break up the monotony of the week and because, well, we really love food. We especially love pizza and normally opt for Purezza, which is a vegan pizza place in Brighton. However, we sometimes choose Domino’s pizza simply because it means we can also get their glorious cookies. We’ve recently realised, however, that you don’t have to order pizza to get the cookies. Seriously. We ordered cookies one Thursday afternoon just because we needed a pick-me-up to get through the rest of the working day.
This does, of course, start getting a bit expensive so we (read: my flatmate, George) started experimenting with Domino’s cookies recipe each time we fancied some. This way we save some dollar but can still live that cookie life. Below is our failsafe ‘How to Make Vegan Cookies’ but with a Domino’s twist, that we have perfected and prefer. They are GOOD. Proper doughy, goo-ey and best of all, vegan.
Ingredients
1 cup of self-raising flour
1/4 cup of light brown sugar
1/4 cup of caster sugar
1/3 cup of dark choc chops (we bash up a bar of 70% dark chocolate for this)
2 tablespoons of oil
3 tablespoons of milk
A teaspoon of vanilla extract
A pinch of salt
Method (serves 6)
- Pre-heat the oven to 190 degrees
- Combine all the dry ingredients, including chocolate chips
- Add the wet ingredients and combine
- Freeze for 25 minutes
- Spoon mixture into a cupcake baking tray – this helps to get a good density on your cookies
- Bake for 8 minutes on 190o
I honestly cannot tell you how long these will last for, we devour them in under ten minutes… However, in an airtight container, I imagine you’ve got a good three days before they will start to go stale. I HIGHLY recommend trying them alongside the Ben and Jerry’s Vegan Cookie Dough ice cream – it’s a match made in heaven. Otherwise, a cuppa is a solid choice.
